1 lb (450g) boneless chicken thighs, diced into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons garam masala

1 teaspoon turmeric powder

1 teaspoon cumin

1 teaspoon red chili powder (adjust to taste)

Salt, to taste

2 tablespoons vegetable oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon ginger, minced

1 cup canned crushed tomatoes

1 cup coconut milk

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine the diced chicken, yogurt, lemon juice, garam masala, turmeric powder, cumin, red chili powder, and salt. Mix well, ensuring the chicken is fully coated. Allow it to marinate while you prepare the sauce (about 10 minutes).

    Sauté Aromatics: In a large skillet or frying pan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and ginger and cook for an additional minute until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet. Sauté on medium-high heat for 5-7 minutes until the chicken is browned and cooked through.
