Ingredients

4 bratwurst sausages

1 tablespoon olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

2 medium potatoes, diced (preferably Yukon Gold)

1 cup sauerkraut, rinsed and drained

1 cup apple cider

1 teaspoon caraway seeds

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Bratwurst: In a large skillet, heat the olive oil over medium heat. Add the bratwurst sausages, cooking for about 6-8 minutes, turning occasionally, until they're browned on all sides. Remove them from the skillet and set aside.

Sauté the Aromatics: In the same skillet, add the sliced onion and cook for 3-4 minutes until soft. Stir in the minced garlic, cooking for an additional 1 minute until fragrant.

Cook the Potatoes: Add the diced potatoes to the skillet, seasoning with salt, pepper, smoked paprika, and caraway seeds. Pour in some of the apple cider (about 1/4 cup) to deglaze the skillet, scraping up any browned bits. Cover and let the potatoes cook for about 10-12 minutes, stirring occasionally, until they start to soften.

Combine Ingredients: Once the potatoes are tender, stir in the sauerkraut and the remaining apple cider. Cut the bratwurst into bite-sized pieces and add them back into the skillet. Mix everything well and simmer for additional 5-7 minutes, allowing all flavors to meld together.

Garnish and Serve: Remove the skillet from heat. Garnish with freshly chopped parsley before serving. Enjoy your hearty Oktoberfest meal straight from the skillet!
