8 oz linguine pasta

1 lb large shrimp, peeled and deveined

3 cups fresh spinach, washed and chopped

4 cloves garlic, minced

1/4 cup olive oil

1/2 tsp red pepper flakes (adjust to taste)

1 lemon, zest and juice

1/4 cup grated Parmesan cheese (plus extra for serving)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente (typically 8-10 minutes). Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once the oil is hot, add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Add Shrimp: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes on each side until the shrimp turns pink and is opaque.

        Incorporate Spinach: Add the chopped spinach to the skillet, sautéing until just wilted, about 2 minutes.

          Combine Everything: Reduce heat to medium-low, and add the drained linguine to the skillet. Pour in the reserved pasta water, lemon zest, and juice. Toss everything together gently until well combined.

            Finish with Parmesan: Stir in the grated Parmesan cheese, allowing it to melt and coat the pasta evenly. Adjust seasoning with salt and pepper, if necessary.

              Serve: Divide the linguine into bowls. Garnish with chopped parsley and an extra sprinkle of Parmesan cheese. Serve warm and enjoy!
