Ingredients

4 salmon fillets (about 6 oz each)

1 cup grated Parmesan cheese

1/2 cup fresh breadcrumbs (or panko for extra crunch)

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1 teaspoon dried oregano

1 teaspoon lemon zest

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil

1 tablespoon lemon juice (freshly squeezed)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper or lightly grease it.

Prepare the Crust Mixture: In a mixing bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, chopped basil, dried oregano, lemon zest, salt, and black pepper. Mix them well to ensure all the herbs and cheese are evenly distributed.

Prep the Salmon: Pat the salmon fillets dry with paper towels. Place them skin-side down on the prepared baking tray. Drizzle lemon juice and olive oil over each fillet, ensuring they are well-coated. This will help the crust adhere better.

Apply the Crust: Generously spoon the Parmesan herb mixture on top of each salmon fillet, pressing it down firmly to form an even and thick layer.

Bake the Salmon: Place the tray in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and reaches an internal temperature of 145°F (63°C), and the crust is golden and crispy.

Broil for Extra Crispiness: For an extra crunchy topping, switch your oven to broil during the last 2-3 minutes of cooking. Keep a close watch to avoid burning!

Serve: Once done, remove the salmon from the oven and let it rest for a couple of minutes. Serve warm with lemon wedges and your favorite side dishes, such as asparagus or a fresh garden salad.
