  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh sage
  • 1 tablespoon fresh thyme
  • 2 cloves garlic
  • 1 zest lemon
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 cup fresh cranberries
  • 0.5 cup sugar
  • 0.5 cup orange juice
  • 1 zest orange
  • 0.25 teaspoon cinnamon
  • 0.25 cup walnuts
  • 2 cups cooked brown rice or quinoa
  • 2 cups mixed greens
  • to taste sliced green onions

Instructions
 

  • Prepare the Herb Butter: In a mixing bowl, combine the softened butter, rosemary, sage, thyme, minced garlic, lemon zest, salt, and pepper. Mix well until all the ingredients are evenly incorporated. Transfer the herb butter onto a piece of parchment paper, shape it into a log, and wrap it tightly. Refrigerate or freeze until firm.
  • Cook the Turkey: Heat olive oil in a skillet over medium heat. Add the ground turkey, season with salt and pepper, and cook, breaking it up with a spatula, until browned and cooked through (around 8-10 minutes). Remove from heat and mix in a couple of tablespoons of the herb butter (to taste).
