Ingredients

8 chicken drumsticks

1 cup buttermilk

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

2 tablespoons dried oregano

1 tablespoon dried thyme

1 tablespoon dried basil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

Olive oil spray (or any cooking spray)

Instructions

Marinate the Chicken: In a large bowl, pour the buttermilk over the chicken drumsticks. Ensure they're well coated. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight for the best flavor and tenderness.

Prepare the Coating: In a separate bowl, mix together the breadcrumbs, grated Parmesan cheese, oregano, thyme, basil, garlic powder, onion powder, paprika, salt, and pepper until well combined.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil spray.

Coat the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Individually coat each drumstick with the breadcrumb mixture, pressing down to adhere the coating well. Place the coated chicken on the prepared baking sheet.

Spray for Crispiness: Lightly spray the coated drumsticks with olive oil spray to enhance crispiness while baking.

Bake the Chicken: Bake in the preheated oven for about 35-40 minutes, or until the internal temperature reaches 165°F (75°C) and the coating is golden brown and crispy. You may want to flip the drumsticks halfway through the cooking time for even browning.

Serve and Enjoy: Let the chicken rest for a few minutes after baking. Serve them hot with your favorite dipping sauce or sides such as roasted vegetables or a fresh salad.
