Ingredients

2 cups cooked macaroni pasta (elbow or shells)

6 large eggs

1 cup milk

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup diced cooked bacon or ham (optional)

1/2 cup chopped fresh spinach or kale

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and black pepper to taste

2 tablespoons olive oil or unsalted butter

Fresh parsley or chives, chopped for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Whisk the Eggs: In a large mixing bowl, whisk together the eggs and milk until fully combined. Add in the garlic powder, onion powder, salt, and pepper. Mix well.

Add the Cheeses: Stir in the shredded cheddar and grated Parmesan cheese until evenly distributed.

Combine Ingredients: Gently fold in the cooked macaroni, diced bacon or ham (if using), and chopped spinach or kale. Ensure all ingredients are well combined.

Cook the Base: In a large, oven-safe skillet, heat the olive oil or butter over medium heat. Once hot, pour the egg and macaroni mixture into the skillet. Cook on the stovetop for 3-5 minutes, allowing the bottom to set.

Bake the Frittata: Transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the frittata is puffed and golden brown on top, and a toothpick inserted into the center comes out clean.

Cool and Slice: Remove from the oven and let it cool for a few minutes. Slice the frittata into wedges.

Serve: Garnish with fresh parsley or chives if desired. Serve warm or at room temperature, and enjoy your family-friendly meal!
