2 cups cooked white rice (can use leftover or microwaveable)

1 lb chicken breast, diced into bite-sized pieces

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of chicken soup (or make your own)

1 cup chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn, etc.)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Chicken: In a large skillet, heat olive oil over medium heat. Add diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until the chicken is lightly browned and fully cooked, about 5-7 minutes. Remove from heat.

      Combine Ingredients: In a large mixing bowl, combine the cooked chicken, cooked rice, cream of chicken soup, chicken broth, mixed vegetables, and 1 cup of shredded cheddar cheese. Mix well until all ingredients are evenly coated and combined.

        Transfer to Baking Dish: Pour the chicken and rice mixture into a greased 9x13-inch baking dish. Spread it evenly.

          Add Topping: Sprinkle an additional 1/2 cup of shredded cheddar cheese on top of the dish for extra cheesiness.

            Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
