Cozy & Creamy Corn Chowder Bowls

4 cups fresh or frozen sweet corn kernels

1 medium onion, diced

3 cloves garlic, minced

2 medium potatoes, peeled and diced

1 medium carrot, diced

1 red bell pepper, diced

4 cups vegetable broth

1 cup heavy cream (or full-fat coconut milk for a vegan option)

2 tablespoons olive oil

1 tablespoon butter (or vegan butter)

1 teaspoon smoked paprika

1/2 teaspoon thyme

Salt and pepper to taste

Fresh chives or parsley, chopped (for garnish)

Optional: crusty bread bowls for serving

Instructions
 

Sauté the Vegetables: In a large pot over medium heat, add the olive oil and butter. Once melted, add the diced onion and cook for about 5 minutes until it becomes translucent. Stir in the garlic, followed by the diced carrot and red bell pepper, sautéing for an additional 3-4 minutes.

    Add Potatoes and Corn: Incorporate the diced potatoes and corn kernels into the pot, mixing well. Allow them to sauté together for another 2-3 minutes to develop flavor.

      Simmer the Chowder: Pour in the vegetable broth, and season with smoked paprika, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 15-20 minutes, or until the potatoes are tender.

        Blend for Creaminess: Using an immersion blender, carefully blend about half of the chowder directly in the pot to create a creamier texture. If you don’t have an immersion blender, you can transfer half of the chowder to a blender to puree, then return it to the pot.

          Stir in the Cream: Once blended to your liking, stir in the heavy cream until combined. Allow the chowder to warm through for another 5 minutes. Taste and adjust seasoning if needed.

            Serve in Bowls: If using crusty bread bowls, hollow out the centers. Ladle the chowder into the bowls, and top with fresh chopped chives or parsley. Serve immediately for a warm, comforting meal!
